cauliflower_soup_1Saying it’s cold outside is a complete and total understatement in our neck of the woods.  Only extremely necessary activities will get me out of my cozy and more importantly warm blanket cocoon.  Eating would be one of those activities (and coffee/tea making, lots and lots of coffee/tea making).  Of course if I am going to eat I will need to make soup!  Let’s face it, nothing else sounds good when it’s subzero outdoors.  While I have many beloved recipes I was in the market for something new.  This cauliflower soup by Pioneer Woman did not disappoint in the least.  It’s warm and comforting…just like that blanket cocoon.

There is an optional step in this recipe that may or may not excite you.  Right before serving you can put a dollop of plain greek yogurt or sour cream in the bottom of the bowl. (We never have sour cream, like ever.  Sticky and I both loathe it’s existence.  No offense to all the sour cream fans out there.)  Then ladle hot soup on top and stir until combined.  It makes the soup velvety and gives it just a hint of tartness.  You’ll either love it or hate it.  My vote is for love, there is a 3 1/2 year old in my home that votes nay.  Either way we are both eating some darn delicious soup.

cauliflower_soup_2 cauliflower_soup_3Currently our fridge consists of leftovers from chili, vegetable and this cauliflower soup.  We are on a schedule of oatmeal for breakfast and warm soup for all other meals including snacking.  I am sure we will be sick of this by Valentine’s Day but for now we are enjoying every bit of our soup diet.  It’s a perk of winter (we tell ourselves).

cauliflower soup
 
Recipe type: Vegetarian
Ingredients
  • 1 stick butter, halved
  • ½ onion, finely diced
  • 2 carrots diced
  • 2 stalks of celery diced
  • 1 to 2 whole cauliflower heads roughly chopped
  • 2 tbsp chopped parsley
  • 2 quarts chicken or vegetable stock
  • 6 tbsp flour
  • 2 cups milk
  • 1 cup half-and-half
  • salt and pepper
  • plain greek yogurt or sour cream (optional)
Instructions
  1. Melt ½ stick butter in dutch oven or heavy pot on medium heat and add onion. Cook for a few minutes until onion is translucent.
  2. Add carrots and celery and cook for a few more minutes. Add cauliflower and parsley, stir to combine.
  3. Cook for 15 minutes over low heat. Add stock and bring to boil and then lower to simmer for around 10 minutes.
  4. Meanwhile melt the other ½ stick of butter in sauce pan and whisk in flour. Cook for a few minutes. Stir in milk and allow to heat up for a few minutes. Take off heat and add half & half.
  5. Add milky mixture to simmering soup and check seasoning (I used bout 2 tsp of salt and 1 tsp of pepper). Allow to simmer for 15 to 20 minutes.
  6. Drop 1 to 2 tbsp of yogurt or sour cream into each bowl. (Totally optional) Ladle soup over top and enjoy!

espresso snickerdoodles

Ah, cookies.  These are a new favorite in our house.  My non-coffee-drinking husband even approves, and in the last few days I have consumed more of them than I would like to admit.  The only problem is they have so much espresso in them that they are not toddler friendly- which is pretty hard to explain to a three year old.  That being said- they are incredibly yummy and you need to make some, now.

Ingredients
  • 3 tablespoons water
  • 2 tablespoons espresso powder
  • ½ cup butter softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • 2 teaspoons vanilla
  • ½ cup cocoa powder
  • 2 ¼ cup flour
  • Topping:
  • ¼ cup sugar
  • 2 teaspoons cinnamon
Instructions
  1. First, combine water and espresso in a small bowl. In a stand mixer, beat butter and sugars. Add eggs, one at a time, followed by vanilla and espresso/water. In a separate bowl, combine the flour, baking soda, cream of tartar, salt and cocoa powder.
  2. Slowly add in the dry ingredients, scraping down the sides of the bowl as needed.
  3. Refrigerate dough for 2-4 hours, until firm.
  4. When ready to bake, preheat the oven to 350F and line two baking sheets with parchment paper.
  5. Combine cinnamon and sugar in a small bowl, and roll 1 inch balls into the mixture before placing on the cookie sheet.
  6. Bake for 10-12 minutes until cracks appear on the surface of the cookies.
  7. Let cool, and store in an airtight container for up to a week.

diy brush cleaner

Today we are “snowed in” and keeping cozy- doing things like organizing our out-of-control toy room, and turning our living room into a princess figurine palace.  (Which I realize is completely contradictory.)  Adelynn has been begging all day to head out into the 9 degree weather and build a snowman, but as I sit here under two blankets I think that is probably going to be a daddy activity when he gets home in a few hours.  Brr. 

While we are hunkered down keeping warm, I am still trying to reorganize my house from the Christmas craziness.  It’s so strange how leading up to Christmas day all of the decorations feel magical, the gifts all perfectly tidy and wrapped under the tree, and then Christmas day rolls around and all of the sudden you feel more like get it all out of here- now.  It’s kind of like spring cleaning, but you can’t open your windows so it’s more like cabin fever cleaning.  Whatever it is, it needs to happen around here.


DIY_HAIR_BRUSH_CLEANER_1

So, in light of cabin fever cleaning- I bring you this handy dandy little hairbrush cleaner diy.  Because no one likes the gunk that builds up around your bristles.

Here’s what you need:

Step one, clean the hair out of your brush using a comb, scissors, another brush- whatever works for you.

Eck.  Look at that brush.  Okay, now look away and pretend you didn’t see it.

Step two, submerge your brush into a bowl of hot, shampoo-y water.  (A few drops will do, then swish them around!)

Step three, wait a few minutes, then use your toothbrush to scrub away at the bristles of the brush.

bing at 3 and 6

Have you ever seen that commercial where a mom douses a little girl in hand sanitizer before she will let her hold her 1st born infant?  Followed by a scene of said mom writing a check in a body shop and handing her 2nd born over to a grease covered mechanic?  Yeah, that is totally us with Bingham.

Of course we love him every bit as we do Jettie.  It’s just slightly more difficult to slow down and be memorized by all those little milestones.  With Jettie we stood with bated breath as she took her first taste of solid food.  There was a camera, she was placed in good lighting and of course she was wearing her prettiest bib.  Bing got a finger covered in pureed spinach shoved in his mouth.  Followed by his dad yelling from the kitchen “Hey Brand, he doesn’t hate it!”  As different as those moments may have been I am equally grateful for the way they both went down.  We were wound tighter and felt more pressure to document everything with her.  #2 has taught us to chill out and enjoy things as they come.  It may not all be captured by a camera but that’s okay…we were still there and that’s all that matters.

As for being on top of things with his 3 month interval photo sessions…let’s just say he is always “x” month-ish.  Lucky for me he grows, but not terribly fast so no one will ever know the difference when they look at these.
