Soup never gets old this time of year, which is lucky for me because it’s about all I make. I’ve been challenging myself to use my crockpot more because up until now it has been a waste of space in my cupboard.  On top of that, I’m at work a few nights a week and really need to do a better job of making sure Adelynn and Josh aren’t eating Rice-A-Roni or PB&J’s when I’m not home to cook.  So- I have been recipe testing, and this one came on a night that Brandy, Jettie and Bing were over for dinner.  Four stars all around!

This recipe comes from one of my favorite new blogs- Creme De La Crumb.  You simply toss all of your ingredients into the crock and let it cook!  I altered the recipe just slightly- adding some vegetable stock to make it a bit “soupier”, and it came out fantastic.  Quinoa is one of those ingredients I wish I used more but never quite know what to make with it- I love that this recipe incorporates it- adding loads of protein without any meat!

Cozy up and make some soup!

crockpot enchilada soup
 
Ingredients
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can yellow corn, drained and rinsed
  • 2 15-ounce cans of mild or medium red enchilada sauce
  • 1 15-ounce can of diced fire roasted tomatoes and green chiles
  • 1 cup un-cooked quinoa + ½ cup water
  • 4 ounces cream cheese (light or fat free is okay)
  • salt and pepper to taste
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 cup shredded Mexican style cheese
  • 3 cups vegetable stock (more or less is fine- your preference!)
  • Once done, top it with: chopped cilantro, diced avocado & sour cream
Instructions
  1. Add all ingredients except for the vegetable stock to your crockpot and stir to combine. Cook on low for 5-7 hours, or on high for 4-5.
  2. Once done, add in stock if you would like the soup less thick.
  3. Top with fresh cilantro, diced avocado and sour cream! Enjoy!

Adelynn’s Candy Cookies

If you have never met Adelynn and I had to explain her in a few words, I would say silly, sweet and sensitive.  (And many times shy).  She’s a deep thinker, and sometimes she has words that I swear are far beyond her years.  She lives in princess dresses, draws funny pictures, and swears she is going to be a ballerina someday (and I believe her).  She is three, in every sense of the word.

When we got Locke’s diagnosis last spring one of my very first thoughts was wondering how we would ever explain any of what was happening to her.  How will we ever protect her heart?  Her innocence?   I wondered what grief looks like for a three year old.  For my three year old.  My sweet, sensitive three year old.

Last week Adelynn was looking through a magazine and spotted a picture of hot air balloons.  She looked at me, hopeful, and said, “mommy.. where do those balloons go?.. do people ride in them?.. look at how high that one is!”.  Thinking it was a normal toddler question I replied telling her the basics of air balloons.  How did I miss the hope in her eyes?  “No!.. Mommy I mean… do you think maybe they go to heaven?  Look at how high in the clouds that one is!  Maybe we could find one that could take us there to see baby brother?”.  All of my strength left me at once.  Disappointment flooded her face.  I can’t tell you how much this hurts.  

Day by day we are trying to figure out how to teach her the right answers to all of her questions, and when all else fails the tears just fall… and sometimes I think the tears are the only answers we need.  If hot air balloons could take us to heaven, we would all be floating high in the sky…

Something Locke left with us was the understanding of just how short (and sweet) life is.  A painful lesson, but one that I am grateful for every single day.  So today, when Adelynn asked if we could bake, and she could decide what went in the cookies, I said why not.

mm_kitkat_marshmallow_cookies_2Some random Kit-Kat bars, marshmallows (her favorite), and M&M’s.   They actually turned out pretty darn good, and oh my goodness was she proud.

mm_kitkat_marshmallow_cookies_4Honestly, this is a great base recipe that you can throw anything in to.  So, next time you want to whip up some cookies… let them be little.  Things can’t really go that wrong where candy is concerned.

Adelynn’s Candy Cookies

Total time
 
Serves: 2½ dozen
Ingredients
  • 2½ C flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 sticks unsalted butter, at room temp
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 box of vanilla pudding mix (not the cook & serve kind!)
  • Any add-ins you choose!
Instructions
  1. Preheat oven to 375F, and line two baking sheets with parchment paper.
  2. Beat butter and sugars using a stand mixer- scraping down the sides until light and fluffy.
  3. In a separate bowl combine flour, salt and baking soda.
  4. Add eggs, one at a time, to the butter mixture. Add vanilla, followed by pudding mix.
  5. Add dry ingredients to wet, mixing until just incorporated.
  6. Add in sweets, scoop and bake for about 13 minutes.
  7. Let cool for about 10 minutes, then transfer to cooling rack to cool completely.
  8. Enjoy!

snow boot virgin

Ever since our trip to Savannah Jettie has been asking more questions about weddings and marriage.  Today she proclaimed that when she gets married Bingham will be her husband.  (Um, I don’t think so Sketts.)  Of course I explained to her why we do not marry our siblings.  Went on to say that someday she may meet someone really special and nice who she will want to call her husband (and is hopefully not related to us in any way).  20 minutes later she came up to me and said “But mom, I think Bingham is a nice boy and I want him for my husband.”  I simply smiled and thought that is so very sweet…and I can’t wait to put that on the internet for her to read when she’s 13.

Alright ladies I need some help.  After several years of denying the fact that I do indeed need real snow boots I am officially in the market for a pair.  While I know quite a bit about many other types of boots I have to admit my snow boot knowledge is very limited.  In fact, I have none at all.  In my quick search today I noticed a. they are not exactly cheap (but why would they be, they keep your feet warm, dry and free of frost bite) and b. they are shockingly way cuter than I expected.  What I want is quality, as in my feet better stay warm and dry, and stylish enough to wear while running errands.  Below are a few of my finds so far (the 6s are making me drool, they are also the steepest in price) but I want to know what you experienced fashionista snow bunnies think.  Any brand, any price – the ones you love and why.  Thank you in advance!

hello valentine
