cranberry pear crisp

cranberry_pear_crisp_1
One of the best things about the seasons changing is the produce isle.  I’m sad to see strawberries go, but squash, apples, pears and cranberries make my heart happy.  Fruit crisp is usually reserved for summertime- our quick throw-together dessert that never disappoints, but this crisp– this one is reserved for fall.

These cranberries are no ordinary cranberries- they came straight from the cranberry festival in Wisconsin (thanks, Sticky!) and are extra delicious.  The great thing about a crisp is that you seriously can not mess it up- you could even use dried cranberries here if you needed to.

This crisp was our dessert last night after our first dinner with the Rammels since Locke was born.  A tradition we treasure, the scene is usually the same: two crazy toddlers running around in crowns and dress-up heels and Bingham swooning us all with his eyebrows while we catch up on life over glasses of wine and yummy food.  Only this time there were two little boys being swooned over.  Four babies to be thankful for.  So much love around that table.

cranberry pear crisp

Ingredients
  • Filling:
  • 4 ripe pears, peeled, seeded and cubed
  • 1 heaping cup of fresh cranberries
  • 3 tbsp sugar
  • ½ tsp cinnamon
  • juice of one lemon, or a few drops of pure lemon essential oil
  • Topping:
  • 1⅓ cup flour
  • 1 cup brown sugar, packed
  • ⅓ cup sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ⅓ cup oats
  • ½ cup (1 stick) unsalted butter, at room temp, cut into cubes
Instructions
  1. Preheat oven to 350F, and take out an 8x8 baking dish.
  2. Prepare the filling by tossing your peeled, cubed pears together with the cranberries, sugar, cinnamon and lemon juice (or oil if you are using essential oils!).
  3. In a separate bowl, make your topping by whisking together the flour, sugars, cinnamon, nutmeg, salt and oats. Toss in the cubed butter. Using your fingers, form the crumb texture.
  4. Mix ½ cup of the crumb topping into the pears and cranberries. Pour filling into your 8x8 dish, and top with the remaining crumb topping.
  5. Bake for 40-45 minutes, until lightly browned on top. Let cool for about 20 minutes before serving.

jump start

Around 11 weeks into my pregnancy I was told to eliminate physical activity due to a hemorrhage detected on ultrasound.  At the time exercise kept me sane but of course keeping things safe for baby was more important, so off my running shoes went.  The remainder of the pregnancy I promised myself I would get right back into the swing of things post baby.  Bingham is 3 months old.  Let’s just say “past me” is incredibly disappointed with the progress “present me” has made.

There always seems to be a laundry list of reasons why we do not take care of ourselves.  Mine includes adding a baby, unexplained aches and pains (that I have yet to go to doctor to get checked out), nursing, behind on work and obligations to others.  And then of course there is the ultimate excuse: not enough time.  While all of these excuses sound valid, none of them dismiss me from taking care of myself.  I know that I am more productive, less stressed, a better mom, wife and person when I feel good.  Why on earth do I keep putting it off?  There is simply not a good enough excuse.

So here I am, stating out loud that I am no longer going to make a half effort with my physical and mental well being.  This is not going to be easy but there are a few things I can do to help myself out a bit:

  • Drink lots and lots and lots of water.  Most of us are dehydrated (some experts say severely) which causes a myriad of problems from digestion to headaches.  Simply sipping on more H2O throughout they day can make a huge difference.  8 glasses a day is suggested but I always say “once you think you have drank enough, drink more and then some.”
  • Sleep.  Oh this is a big one for me.  I cannot even blame the baby for my lack of sleep because he snoozes like a champ.  It’s shutting off my mind and giving in to the tiredness that keeps me from getting all the zzz’s I need.  Recently I have started plugging my devices into their charger an hour before bed and not looking at them until morning.  This keeps me from doing any social media perusing when I should be focusing on sleeping.

  • Set priorities.  This post is not about weight, jean size or inches lost.  This is about a promise, that we make to ourselves, to put in the time to feel better.  Sticking to a schedule, with no “I just can’t today” days, and holding our own selves accountable.  This morning I really had no desire to throw in the Jillian video.  But not throwing it in meant feeling far worse for way longer than not wanting to throw it in.
  • Healthy Meal Planning Eating Healthy does not have to be difficult.  Nor must you eat healthy all of the time (or at least I can’t).  But having a few good for you recipes under your belt that can easily be whipped up at any time is extremely beneficial.  Here are some of my favorites:

  • Accountability Health Partner Whether it’s a spouse or friend it is always beneficial to have someone to keep you in check and be there for support when needed.  Sticky and I may not workout together but by seeing him do something healthy makes me want to do the same for myself.  And vice versa.

Here is to better living!  I am only about a week in to my “set” schedule.  Hopefully I can stay on track and happily report a better feeling “me” in the future.

Cheers!

boots for $100 or under

Boot season is here!  Boot season is here!  Boot season is here!  Wait…I can’t afford boots.

Every year jackets are unveiled, sweaters are stacked on tables and gorgeous leather boots line the shelves.  And every year I drool and wish and dream about taking all of them home.  Alas things like heat and food stand in the way of my fantasy of a room full of nothing but boots.  Good news is there are some deals to be had in the form of over the knee, western, military and so on.  The hardest part will be which one to choose (they all have my eye):

I am leaning towards #1 because they are so economical and fabulous, #3 because I don’t have a pair of flat booties (although I am not 100% sure I could rock them) and #4 because I am “over the knee” obsessed and those could be worn with anything.  Which ones do you love?

apple cider sangria

apple_cider_sangria_1It has been far too long since we loaded the car, left our worries at home and headed to a little piece of land called Kelleys Island.  A place where time passes slightly slower and you can actually breath in the change of the season.  The weather is forecast to be chilly.  Which just happens to be perfect for coffee drinking, football watching and soup sipping.  If the sun does decide to peek it’s head out to heat up the afternoon leaves we will be ready to say hello, with this amazing fall drink in hand.

apple_cider_sangria_5If you are going to make this fabulous drink (which you should) there is one thing that you absolutely must not skimp on – the amount of time that it sets.  Sure 4 hours may be fine, but 24 gives the spices and fruit the time they need to infuse the liquids.  Making a drink that not only looks like fall but tastes like it as well.

apple_cider_sangria_4 apple_cider_sangria_2Gosh this drink is pretty.

apple_cider_sangria_3 apple_cider_sangria_6It’s the weekend.  Hallelujah.  This is a much needed getaway from a work week of a lot of little things piling up into one big thing.  Cannot think of a better cure than some lake air and this cocktail.

Cheers!
