I’m having a bit of writers block- and to be totally honest with you I’m running around like a chicken with my head cut off trying to check everything off my to-do list today, SO- here are some super scrumptious last-minute, easy to make, alternative-to-pie, pecan pumpkin pie bars!

pecan pumpkin pie bars
 
Ingredients
  • For the Filling:
  • 1⅓ cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ teaspoon salt
  • 1 cup old fashioned oats
  • ¾ cups (1½ sticks) unsalted butter, cold and cut into small cubes
  • ½ cup coarsely chopped pecans
  • For the Filling
  • 4 ounces cream cheese, softened
  • 1 cup pumpkin puree
  • ⅓ cup granulated sugar
  • 1 large egg plus 1 large egg white
  • 1 teaspoon ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ⅛ teaspoon all-spice
  • ⅛ teaspoon ground ginger
  • pinch of salt
  • 1 teaspoon pure vanilla extract
Instructions
  1. Place a rack in the center of the oven and preheat oven to 350 degrees F. Grease an 8x8-inch square pan with butter or shortening. Line with parchment paper and set aside.
  2. In a medium bowl, whisk together flour, granulated sugar, brown sugar, salt, and oats. Add cold butter and quickly but thoroughly break the butter up into the dry ingredients. When broken down, some butter pieces will be the size of small peas, others will be the size of oat flakes. Add the chopped pecans and toss to thoroughly combine.
  3. Remove about 1½ (to 2 cup) of the mixture from the bowl and place in a small bowl in the refrigerator. This will be our crumble topping.
  4. Dump the remaining crust mixture into the prepared pan. Using your fingers, evenly press the crust into the bottom of the pans. Try to make sure that the crust has an even thickness across the pan. Place the pressed crust in the refrigerator while you prepare the filling.
  5. To prepare the filling place cream cheese in the bowl of an electric stand mixer fitted with a paddle attachment. Beat cream cheese on medium speed for about 1 minute, until smooth and pliable. This will help the cream cheese be less chunky when combined with the pumpkin.
  6. Add pumpkin and sugar to the softened cream cheese and beat on medium speed. Stop the mixer occasionally to scrape down the sides of the bowl, ensuring that the pumpkin and cream cheese are thoroughly combined. If the cream cheese looks chunky, switch to the whisk attachment and beat on high speed until most of the cream cheese lumps are incorporated.
  7. On medium speed add the egg and egg white. Beat to combine (about 1 minute). Add the spices, salt, and vanilla extract. Beat to combine.
  8. Remove the pressed crust and loose crumb from the refrigerator. Pour the creamy pumpkin filling over the pressed crust. Sprinkle generously with crumb topping. Bake for 20 to 25 minutes or until the center no longer jiggles. Remove from the oven and allow to cool completely before removing from the pan and slicing. I like to slice and serve these bars chilled.
  9. To store, wrap individual bars in plastic wrap and keep in the fridge for up to 4 days.

knot and toss half up-do

It goes without saying that we claim more of our hair tutorials than not to be easy, easy, easy.  While we stand by those claims we have to admit that this particular up-do is without a doubt the simplest one yet.  Grap, knot and pin – that’s all there is to it!

So if you are looking for just the right hairstyle to rock with all those oversized sweaters look no more…

  1. Grab a 2 to 3″ section of hair on each side of head.  (Leave pieces in the front if you prefer hair around your face.)
  2. Tie sections in a knot.
  3. Secure one side of knot with bobby pin.  Does not matter which side you choose, just make sure it is secure.  Allow other side to hang “loosely” down.
  4. Finish with a little hair spray.

A few tips:

  • Best on day after wash hair.
  • For volume tease hair first.
  • Make it romantic by adding some big loose curls before styling.

“It’s a rather blustery day.”  That was certainly the theme in our neck of the woods.  For an area rather used to wind I was in awe of the way mother nature unleashed herself today.  (No one’s hair stood a chance – including yours Sticky.)

Of course all that blowing can only mean one thing – frigid air is on it’s way.  While this is not the best news it does at the very least give us a free pass for snuggling up in something cozy.  With all the crop tops, short skirts and fitted dresses on the racks it’s nice to shop for something you can “hide” in a bit.  With that being said this is not a one size fits all look.  If you are petite steer clear of thick,chunky material in longer lengths.  They will add too much bulk to your small frame.  Shop for lighter material with a shorter length.  Ladies with a larger bust may want to steer clear of bulky cowl and turtlenecks.  A more open neckline will flatter your build and keep you from looking top heavy.  If you are lacking in curves go for bulky, more oversized sweaters (keep size in mind because there is a fine line between oversized and “your sweater is way too big”).  Also look for details like zippers to add shape.

Finding just the right oversized sweater is definitely a trial and error process.  Once you have found a good one though you will never want to take it off.

winter bourbon smash gift kit and jam giveaway! (closed)

  • 1 orange

  • recipe and labels (click here for printable)
  • club soda, shaker, jigger, mason jar – all optional

Tie labels on ingredients with twine or ribbon, fill container with tissue or shred and arrange items in a pleasing way.  Top with recipe and just like that you have a gift that will make someone very, very happy.

Ingredients
  • 2 Tbsp raspberry jam
  • 2 Tbsp bourbon
  • 1 Tbsp triple sec
  • 2-3 Tbsp fresh orange juice
  • Orange segments (optional)
  • A splash of club soda (optional)
Instructions
  1. Add ½ cup ice, the preserves, bourbon, triple sec & orange juice to a shaker.
  2. Shake, shake, shake for 15 seconds
  3. Pour into glass (mason jar works like a charm) with a few ice cubes and top with club soda (if that’s your thing). Garnish with an orange segment or two.
  4. Enjoy!
