One thing that throws people with the scones though is the dough – it is a hot mess. And it is suppose to look like a hot mess. As long as you have a well floured surface though you should be able to form that mess into a round.

Roasted Pear & Chocolate Chip Scones with Salted Caramel Sauce20 minutes in the oven and you have tender, fluffy scones bursting with warm pear and bitter chocolate. The worst part is waiting them to cool enough to shove in your face.

Now, these are absolutely fabulous on their own. Let’s get that straight. But for some reason I had the urge to drizzle..

It was worth every second of the extra effort to make these already perfect scones out of this world.

Serves: 8
Ingredients
  • For the scones:
  • 3 medium size firm pears - not overripe but not rock hard - peeled, cored and chopped into 1" pieces
  • 1½cups all-purpose flour
  • ¼cup sugar plus 1tbsp for sprinkling
  • 1½tsp baking powder
  • ½tsp kosher salt plus a pink add'l for egg wash
  • 6tbsp cold unsalted butter, cubed
  • ¼cup heavy cream
  • ¼cup semisweet or dark chocolate chips
  • 2 large eggs, 1 for dough, 1 for egg wash
  • For the sauce:
  • 1cup sugar
  • 6tbsp unsalted butter, cubed
  • ½cup heavy cream
  • 1½tsp kosher or sea salt
Instructions
  1. Preheat oven 375ºF. Line a baking sheet with parchment paper and roast pears until dry and a little brown on the bottom. A bout 20 minutes. Set aside to cool. Do not turn oven off.
  2. Place flour, ¼cup sugar, baking powder and ½tsp salt in a mixing bowl. Whisk together. Fit mixer with a paddle attachment and add cooled pears, butter, heavy cream and 1 egg. Mix on low until ingredients are just combined (no over-mixing!). Add chocolate chips and mix for just a for more seconds.
  3. Place fresh parchment paper on your baking sheet. Dump dough onto a well floured surface. Form into a 6" disc. (The dough may seem really crumbly - it's okay, just put it together with your hands.) Cut into 8 wedges and carefully transfer to the prepared baking sheet. Bake in 375ºF oven for 20 minutes or until scones are firm to the touch. Allow to cool on the sheet.
  4. For the sauce place sugar in a saucepan over medium high heat. Stir constantly with a heat resistant spatula or wooden spoon until melted. Will turn lumpy and then deep dark amber brown. Make sure to keep the story going otherwise your sugar will burn and no caramel will be made.
  5. Once sugar is completed melted add the butter, continuing the stir. Be careful because the butter will make it bubble. Continue stirring until butter is completely melted. SLOWLY add the heavy cream, stirring the whole time. Once completely added let boil for 1 minute (no stirring during this step).
  6. Take sauce off the heat and add salt. Stir will and then carefully pour in a heat tolerant container. Allow to cool before using (doesn't need to be cold though - a little warmer than room temp is good). Drizzle over your beautiful scones and devour. Store extra sauce in airtight container, in the fridge for up to 2 weeks.

bordeaux do

If there is an it color for lips and nails right now it would be bordeaux..or marsala..or cabernet..or whatever you care to call luxurious deep dark red. A beautiful dark color that looks amazing on almost every skin tone. My nails will definitely be getting this goth inspired treatment. My lips..well, they are lucky to see lip balm on a daily basis but I am enticed to give this a try. (For a date night at the very least):

go bandanas

Transitional seasons are the best. It’s that special time of year when hats, jackets and booties are center stage. You don’t have to hide your super cure outfit underneath a bulky coat.  And you no longer have to worry about those piggies being painted and legs being freshly shaved. (Hallelujah!)

As with most transitional seasons there is always one item that is all the sudden a fresh, must have. Lucky for us this year’s have to have is more than likely something we already own. And if we don’t, it certainly won’t break the bank purchasing new.

Break out those bandanas ladies – except this time we are going to accessorize our necks with them. And here are a handful of ways to do just that:

ways to wear a bandana around the neck1Twist & Knot – fold bandana in half, point to point. Continue to fold by about 2″ increments until you have folded down to 2″. Hold at one end and beginning twisting at the other. Do not stop twisting until entire length is twisted. Wrap around neck and tie into a low knot in the front (you will want to hold onto the ends secretly while knotting otherwise twist will untwist)./2Double Pennant – fold bandana in half, point to point except angle one point farther than the other (this creates your double pennant). Fold the folded side down a bit and then tie around neck – knot in the back with pennants facing forward. You can adjust points slightly after bandana is tied./3Cowboy – fold bandana in half point to point. Placing point in the front, tie around neck in the back. Easiest and maybe the coolest way to wear your bandana./4Chocker & Necklace – fold bandana in half lengthwise all the way down to 2″. Wrap around neck already decked out with a dainty necklace. Tie in the back.

As you can see the bandana is incredibly versatile – going with everything from your military jacket to a thin strap cami. The key to it looking effortless is to pair is with one basic piece (like a solid tee) and one current piece (like jogger pants or utility jacket). Simple as that! (But we won’t tell anyone because it is effortless after all.)

Now go dig out those bandanas! (I think the last time I wore mine was when Trading Spaces was on current television – oy vey!)

When I think fall I think pumpkin. If I had a fall baby you better believe we would be celebrating pumpkin style. It’s a theme with built in decor and endless food options. The biggest problem would be when to stop because let’s face it, pumpkins own pinterest from the months of September to November.

caramelized onion goat cheese calzones

Caramelized Onion Goat Cheese CalzonesSitting on our kitchen counter is the most triumphant piece of paper I have seen in a while. Why? Because it has a meal plan for the week on it and for the first time in the history of my life it has been followed. (Okay, I am jumping the gun a bit with 2 days left to go but still..this is kind of a miracle.)

All of you awesome list makers and followers must be thinking ..big deal! And you are right – it’s not really that big of a deal. Lists and being prepared are so not my thing, which sort of worked out for me until now.

Sticky has been taking on a lot these days, which is not uncommon, but this year in particular he is in overdrive with projects and his own career path. I’m over the moon honored to have a front row seat to his success, but I’d be lying if I didn’t admit to my own quicksand moments here at home.

There has been some incredibly hard days..ones that leave me feeling so overwhelmed by what’s not finished, what needs started and what I’d love to do but simply can’t. I am the worst ever about asking for help, because let’s face it, who’s not busy nowadays? And then there’s the whole “I want to be the best wife, mom, friend, designer, photographer, blogger, all the time, every second, of every day. Phew!” Yet I don’t feel like I am doing any of those things 100%. And that leaves me feeling defeated.

So yeah, there are those times when all I want to do is close my eyes and scream in a pillow. Which actually helps. Shutting yourself in the bathroom for a few minutes and having a good ugly cry does as well. And so does that little piece of Halloween notepad paper that has checkmarks next to the meals that I actually succeeded in completing.

Small victories make a big impact. Especially with keeping sanity in check when it comes to working from home and mommy-ing from home.

Now onto these calzones….

Caramelized Onion Goat Cheese CalzonesWhen I made my meal plan I was thinking efficiency and there is nothing more versatile in my repertoire than my homemade marinara and easy pizza dough. The marinara I used 3 times – spaghetti, vegetable parmesan & these calzones. The pizza I used twice. Make once, use multiple times, that is how you defeat the dreaded “what are we having for dinner” question.

(By the by, if you do not want to make your own crust or marinara, I completely get you. I don’t always want to either.) The other great thing is that they are different without being complicated. Caramelizing an onion takes it to the world of gourmet. Pairing the onion with goat cheese is pure magic in your mouth. This will be your new favorite way to calzone your dough.

caramelized onion goat cheese calzones

Serves: 4
Ingredients
  • 1 red onion sliced thin
  • 2tbsp unsalted butter
  • Uncooked pizza dough (enough for 1 pizza or ½ of PPJ's easy pizza dough recipe)
  • 1½cup marinara sauce
  • 3oz goat cheese
  • 1cup fresh spinach leaves
  • 1 large egge beaten
Instructions
  1. Preheat oven 425ºF. Lightly oil a baking sheet.
  2. Place butter in a medium pan over medium heat and add onion. Cook slowly until caramelized - about 30 to 40 minutes.
  3. While onions are caramelizing, divide dough into 4 equal parts. Press or roll each into 6" to 8" circles. You want the dough to be about ¼" thick so that it can hold up when folding with ingredients inside.
  4. When onions are done, place 2 to 3tbsp of marina in the center of each dough disc. Top with ¼ of the onion, ¼ of the goat cheese and 5 to 6 spinach leaves. Brush ½ of edge with egg wash and fold dough over, folding the bottom edge up over the top to seal. Set on prepared sheet and repeat with remaining dough.
  5. Brush all calzones with egg wash and place in oven for 8 to 10 minutes or until calzones are golden and dough is cooked. Serve with leftover marinara.
