brussels sprouts with balsamic, cranberries, goat cheese and walnuts

brussels_sprouts_balsamic_goat_cheese_walnuts_thanksgiving_side_dish_1With Thanksgiving, aka Super Bowl of Food, just around the corner I thought why not share a side dish that I absolutely love. But not just any side dish. No, no. This recipe contains the vegetable that kicks all other vegetables arses…brussels sprouts.  (And yes it is brussels and not brussel – the internet says so.)

Now I know many people scrunch their noses in disgust at the thought of eating these mini cabbage balls of goodness. And I can understand if they have only been served brussels that have been cooked to the point of mush. If you are one of these unfortunate individuals I present to you a different way to eat your sprouts. Tender, with crispy golden edges, and then covered in a thick, sweet balsamic glaze. Tossed with tart cranberries, crunchy walnuts and my favorite, tangy goat cheese. This is the way to eat your sprouts America (or anywhere, even Brussels I suppose).

My mind still thinks darkness falls around 7:30pm, that’s only about 2 hours off from when the sun actually sets. Needless to say it was a race between me, the sprouts and the little light that was left. I won by the skin of my teeth…by the looks of these images we may have to call it a tie.

brussels sprouts with balsamic, cranberries, goat cheese and walnuts
 
Serves: 8 small servings
Ingredients
  • 1.5lbs brussels sprouts
  • ¼c olive oil
  • salt & pepper
  • ½c balsamic vinegar
  • ¼c sugar
  • ⅓c dried cranberries
  • ¼c toasted walnuts
  • 4oz goat cheese
Instructions
  1. Preheat oven 375F
  2. Cut sprouts in half (or leave whole if small) and spread in single layer on baking sheet. Drizzle with olive oil and salt & pepper to taste. Roast until golden and tender - 15 to 20 minutes.
  3. Meanwhile put vinegar and sugar in small saucepan and bring to boil over medium high heat. Lower to simmer until thickened - about 10 minutes (keep eye on it though).
  4. Toss brussels sprouts with vinegar/sugar reduction, cranberries, and walnuts. Place in serving dish and crumble goat cheese over top. Serve immediately.

oats_1Oats are a staple in our home.  Whether in the form of cooked oats topped with brown sugar or jam, used to make granola, or maybe sautéed in bacon grease until toasted and then stirred into a delicious baked oatmeal dish topped with maple syrup, we love oats.  But not just any version, the original old-fashioned oats!  This brand my favorite.  There are other varieties of oats, such as the quick cook or steel cut, but the old-fashioned have such a creamier texture than the other versions.  And in reality, they only take a minute and 45 seconds in the microwave.  When I was a child my mother always made us breakfast and oatmeal was usually on the weekly menu, especially in the winter.  She cooked them on the stove and then would stir in brown sugar and serve with a splash of milk over the top and I loved.  Over the years, my love of oats hasn’t wavered and my oldest daughter requests them on a regular basis too.  Of course I can think of several ways to serve, but here are a few of my favorites:

Cook the oats as directed on box, but replace the water with a mixture of equal parts milk and cream (1/2 & 1/2).  Then stir in a teaspoon of brown sugar per serving and top with mini chocolate chips, dried sweet cherries, and a crumble of granola.  The chocolate will melt into the hot oats, the cherries will plump up and it is almost like having a decadent dessert for breakfast.

oats_jam_oatmeal_42.  Cook the oats as directed on box using water or milk.  When finished cooking, add a tablespoon or two of apple butter, along with fresh chopped apples, and if nuts aren’t an issue in your home, sprinkle a few over the top and enjoy.

oats_jam_oatmeal_53.  This is my favorite version!  Cook the oats as directed on box using water or milk.  When finished cooking, add a tablespoon of Blueberry Amaretto Jam, a splash of DiSaronno Amaretto, and a handful of fresh or frozen blueberries.  The amaretto gives this a deep rich almond flavor, without actually adding any almonds to the dish.  We cannot have any peanuts or tree nuts in our home due to severe allergies and DiSaronno is the only brand of amaretto on the market (that I am aware of) that is not made with almonds, but with apricot pits.  I recommend this amaretto as a substitute for almond flavoring in almost any recipe, especially baked goods.

oats_jam_oatmeal_3 oats_jam_oatmeal_24.  And last, double steep your favorite fragrant tea and use the tea water in place of the recommended liquid amount in your oats.  I recommend a tea that has a strong flavor with notes of cinnamon, cloves, nutmeg, chai spices, and/or vanilla.  Any of those flavors will compliment your oats.  I used one of my favorite teas when preparing this recipe: Hot Cinnamon Sunset.  I recommend stirring in a teaspoon of brown sugar and 1/2 of a chopped apple prior to cooking.  The oats will taste like a spiced baked apple treat when cooked and will make the perfect recipe for the last of the gorgeous Fall apples.

post workout hair (without washing)

post_workout_hair_without_washing_1Finding the motivation to workout is a challenge in and of itself.  Especially when you are crunched for time.  The little excuses, like having to wash your hair post workout, can completely derail your exercise regimen.  For the longest time I thought I had to wash it after every run or cross training video…there is sweat involved for crying out loud, a lot of sweat.  But when a girl wants to workout more days a week than she washes her hair she has got to come up with a solution.  This is not by all means fool proof, and will have different outcomes for different hair types.  But it has worked for me at least 90% of the time.

Immediately after working out:

  • Pat sweat dry around face and neck with a clean dry towel.  Be careful not to rub the sweat into your hairline – that will make it an oily that no dry shampoo could ever conquer.
  • Take hair out of ponytail.  I absolutely cannot workout unless every single hair on my head is tightly pulled away from my face.  If you like to have your hair down (because you’re weird clearly) at least wear a head band to keep hair away from the sweat on your face.
  • Dry any sweat in hair with the cold setting on your hairdryer.  If yours does not have one go get yourself one – it’s essential in this process.  Absolutely do not use the warm air.  Unless you want to look like you just joined the Fight Club.
  • Use dry shampoo around hairline and part (wherever oil builds up).  I really love our DIY version.
  • Tease hair if flat and style as normal.

Below is my hair post workout and then the next day.  I did all the steps above immediately after workout except the last one.  This morning I added some more dry shampoo and then styled.  My hair is in desperate need of a trim and color (please disregard) but for day 3 since hair was last washed it is not doing too bad.

last leaves

“How are you doing?”  If you encounter another human being today there’s a good chance this question will come up.  There’s also a good chance you’ll respond with “Good!  How are you?”.  It’s a courtesy question with a sugar coated answer.  Polite small talk if you will.

Then there are times when the right person at the right moment asks you this question.  Ready or not they are about hear the cold hard truth.  This person was Sticky last week – he was out of town and wanted to check in on us.  We were not even three seconds into the conversation when he was bombarded with “I’m irritated as hell because my hair is still falling out in extraordinary amounts, these extra 10lbs my body is holding onto piss me off daily, no HOURLY and I feel like I am failing in every single aspect of my life.”  A few seconds of silence and then “I am sorry babe but thank you for being honest.  You rarely are when I ask you that question.”

When things are hard I have this bad habit of convincing myself not to complain because somebody else out there is far worse off than me.  What right do I have to vent my frustrations?  Even the big stuff I will bury…I am strong if I am anything after all.  There is nothing I can’t get through on my own. What a bunch of BS. Constantly telling the world “I’m okay”, “I’ve got this” or “Don’t worry about me” is a sure fire way to set myself up for failure. There is a lot of pride and independence that comes with being self sufficient. It’s certainly something I would never want to lack. But the unwillingness to let anyone in on the truth of your battles can leave you feeling isolated with your emotions. Fighting yourself on a deserted island with no one to SOS. As vain, trite or complicated as my response to Sticky may have been it felt good to say all of those things. He is my husband after all. If nothing else I owe him my true, unfiltered, non-sugar coated feelings…I owe it to myself even more.

As you may have guessed, last week was just one of those weeks. Nothing exceptionally bad happened yet a lot of little road bumps had me annoyed, daily. No one likes to be in that sort of mood, especially for more than a day, but it happens to even the best of us from time to time. Thank goodness for fall and the last of the fallen leaves. Sticky made it home just in time to capture his girls enjoying the end of this beautiful season. (Sticky made it home – gosh it’s never felt better to say that.)

these things

For years I have felt alone in the awesomeness that is Gilmore Girls.  A show about a mother and daughter facing life’s challenges with quick wit and a myriad of colorful characters.  It will make you laugh.  It will make you cry.  It will make you wish you lived in Stars Hollow with Lorelai as your BFF.  (Which is not possible of course because Sookie St James is her BFF.  Who happens to be played be Melissa McCarthy.  Why wasn’t everyone watching this show again?)  Thank goodness for netflix and the recent release of my beloved Gilmore Girls.  I love seeing my feed full of new fans.  Finally the masses are keen to why Lorelai and Rory are worth knowing.  Let’s dish!

gilmoreEmily of Cupcakes and Cashmere (one of my favorite bloggers) is pregnant and yesterday her husband weighed in on his soon to be new role of Dad.  Immediately upon reading this I felt connected to this man’s point of view.  Simple, logical lessons for life that can often be lost or forgotten in the craziness that comes with raising a child in today’s world.  A link worth bookmarking for sure.  I believe their little girl is in good hands.
