granny’s no bake cookies

No Bake CookiesNothing, and I mean nothing, says childhood more to me than the smell of no bake cookies. This recipe, Kool-aid and iceberg lettuce with poppyseed dressing were made by me, in my Granny’s kitchen, at least a bazillion times. Gosh, those are some great memories…

A couple years before we had Jettie I had a hankering for something familiar. I thought why not whip out the ol’ no bake recipe and see what my man thinks of one of my all time favorite treats. Not gonna lie, I was slightly nervous. If he were to dislike these cookies I’m not sure I could look him in the eyes the same way ever again. (Let alone have kids with the monster!) But alas, one bite and he said… “These are like crack.”

I love these cookies. I love my Granny. And good grief do I love my husband. He gets me.

No Bake CookiesToday is Sticky’s birthday and of course Jettie wanted to know what kind of a party he was going to have. I don’t know why my daughter thinks birthdays need to have themes…I mean where would she get that sort of idea??? After explaining to her that he was having a simple party with mommy at a restaurant she said “Well, could you save me a piece of cake?”

Tonight we will bring home cake. Cake that we never planned on buying let alone eating. But cake it is because an adorable 4 year old thinks birthdays need to involve cake.

As for these cookies, I simply had to make something for Sticky this morning. And who doesn’t love crack for their birthday? (If you don’t laugh it doesn’t matter..I know my handsome man is smiling.)

I don’t care though.. he is so cute and wonderful that his rottenness doesn’t even bother me. I totally get why they make little boys this way…yep, totally get it.

granny's no bake cookies

Author:
Serves: 2 dozen
Ingredients
  • 1 stick of unsalted butter (or ¼ cup butter and ¼ cup coconut oil)
  • 2cups sugar
  • ½cup milk
  • ½cup peanut butter
  • 1tsp vanilla
  • 3cups oatmeal
  • 3tbsp cocoa powder (I like dark)
  • ½tsp espresso powder
  • ¼tsp kosher salt
Instructions
  1. Put butter, sugar and milk in medium pot an stir over medium heat until well combined. Add meant butter and vanilla and bring to a rolling boil. Allow to boil for about 90 seconds. Keep an eye on it not to boil over.
  2. Place oatmeal, cocoa powder, espresso powder and salt in a large bowl. Mix well.
  3. Pour wet ingredients over dry and combine well. Drop 2tbsp of mixture onto wax paper or parchment paper (I used a medium size ice cream scoop). Allow to set and then devour.

lip protection

When it comes to my lips and keeping them from becoming chapped I have two big strikes against me: Lip Biter and Lip Licker. Yep, I know they are not good for me but yet I can’t help but do both. I even bite my lips in my sleep. (Sorry lips.)

In the last couple of years I have put an honest effort forth in controlling my bad habits and making sure I am always armed with balm of some sort (which I have talked about before, but I believe it is worth reiterating with winter approaching). A few things that have helped eliminate the occurrence of chapped lips:

  • drinking tons of water (It cures everything, just like coconut oil.. right?!)
  • humidfier running during the dryer months
  • cover mouth with scarf or something similar in the winter months when outdoors
  • avoid allergy triggers (I am now allergic to peanut shells since giving birth to Bingham. Me and Five Guys are no longer friendly.)
  • avoid matte lipsticks, no matter how fab they are. They can dry out your lips in an instant. Cream based ones are much more hydrating.

As for which balms I prefer here are my top 4 drugstore finds:

Lip Balms1Vaseline Lip Therapy/2EOS Sweet Mint/3Smith’s Rosebud Salve/4Maybelline Baby Lips

I love to put the Vaseline one on at night. In fact I used to use coconut oil but I have found it not to be as good at fighting the chapped lips than V’s lip therapy. (Take that magical coconut oil.) As for the other 3 they can be found in my purse, diaper bag, kitchen counter, on top of the piano, beside the bed, coat pocket, in the hand of my thieving husband… you get the gist.

guest style | ash and auggie

mommy and son styleYou may recognize this adorable duo from a couple years back. If not, this is Ashley and she is my fabulous and beautiful cousin. That cute little boy is her son Auggie. Together they make you smile because they always look so stylish and cozy.

Ash and I may not exactly look like blood relatives but our interests are very similar as well as a handful of personality traits (stubborn, passionate, sensitive…it’s in our blood). We have both been lovers of all things fashion since I can remember. And we both love classically chic styling. Hence…she gets featured on here quite a bit because I love her and the way she dresses. (Plus it’s my blog after all. I can feature whomever I want, right?!)

Now that I have a little boy of my own, I turn to my wise friends for outfit inspiration. Auggie is always dressed to the nines. I love his timeless comfort with hints of hipster. Perfect for a man boy to a gorgeous momma!

beverage ways to halloween

This was suppose to be my last Friday installment of Halloween beverage ideas. Three times I had this all typed up and three times it wouldn’t let me post. So here I am on Monday evening (because I wasn’t about to dedicate my weekend to figuring out something technical) posting for Friday. What the problem was, I have no idea. (But I am pretty sure it was me because I did a more than an acceptable amount of dumb things last Friday.)

easy lentil soup

Easy Lentil SoupLentil soup has been on my radar for quite sometime. It’s something I order quite a bit in restaurants but have never made at home. This was my first attempt and I am very happy with the outcome. Warm, comforting and filling – just as a soup should be. And we can’t forget about the added bonus of being healthy. Always a plus this time of year when binge eating, carbs and sugar seems to rule the world.

Easy Lentil SoupSomething that I have been experimenting with lately is charring my garlic in their peels before mincing. It does not add on much additional work time…but it does add a whole lot of flavor that plain old cooked garlic does not have. You can skip the step if you want to but at you have got to try it at least once.

Easy Lentil SoupThe only thing this soup was missing for me is some crusty bread (wait, what was I saying about being healthy???). But even sans the crusty bread I was 100% happy with this easy to throw together soup. I think you will be too!

Serves: 8
Ingredients
  • 4 garlic cloves in their peel
  • 3tbsp olive oil
  • 1 small onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1tbsp cumin
  • 2 cups uncooked lentils
  • 2qts vegetable or chicken broth
  • 1 bay leaf
  • one parmasen rind (optional but highly suggested - simply throw rinds in freezer and save for broth soups)
  • salt and pepper to taste
  • fresh spinach (optional)
Instructions
  1. Heat a large pot over medium heat and throw cloves in (with peels on). Char both sides of peel, garlic should smell amazing.
  2. Remove peels and coat bottom of pot with olive oil. Add carrots, celery, onion and cumin - cook for a few minutes. Peel and chop garlic and throw in pot. Sauté for a few minutes and then add stock, bay leaf, lentils and rind.
  3. Bring soup to a simmer and cook for 30 minutes. Fill a bowl with fresh spinach leaves and pour soup on top.
