A little warmer temps and some much-needed sunshine had my family excited to get out of the house and head to the park this past weekend.  I was getting coats and shoes around while Althea (3 yrs old) went running upstairs. I finished getting Vada around and Seth was packing up our boxer, Myles. Everyone was ready to head out, except Althea. I hollered for her so we could go. She came running with her little makeup kit and told me she wasn’t ready yet. “Mommy, I NOT ready, I need to put my makeup and lipstick on.” I reassured her she looked beautiful and that she didn’t need her makeup on to go to the park, but she insisted. She told me that she just needed her lipstick on and we could go. She finished applying her pretty red lipstick, her favorite, and we headed out the door for a great afternoon at the park.

It seems like every day Althea gets more and more interested in hair, makeup, and fashion. It truly makes my heart melt. I love that she wants to pick her own clothes out and wear a little makeup and style her hair just like mommy’s. I love that she is her own little stylish person.

my new green

green_1Green – it’s the color of the year (according to Pantone) and the star of St Patty’s day.  As I was digging through my closet in search of the perfect ensemble I was disappointed in my lack of green.  Not impressed with an over-sized sweater nor the rhinestone embellished tank uncovered (which no longer resides in my closet – yikes) I opted for some retail therapy.  Now if you are anything like me and you take holidays seriously you will understand that I was not looking to purchase pistachio, mint or hunter green.  My radar was set on real deal “kiss me I’m Irish” green green, anything else simply wouldn’t do.  Much to my delight my first stop became my last because in less than 3 minutes I spied a pretty little button up in the perfect shade of emerald.  Call me crazy but I’m fairly certain the hanger formerly holding my bejeweled tank smiled when I replaced it with this lovely number.green_4 green_2 green_3|WEARING| H&M green shirt/Forever 21 maxi skirt/cropped jean jacket similar/silver bracelet similar/tan bag similar/woven sandals similar

cloud nine

581904_10151510211473529_273086374_nThe view you are looking at is my favorite on all of the island of Oahu, Hawaii.  After a short hike, a few heart-pounding uphill moments, and a climb atop a deserted bunker- you find yourself here- catching your breath not because of the hike, but because of the beauty.  Looking out- Lani Kai beach (in my opinion, the best on the island and a must see if you visit Oahu) and the clear turquoise Pacific.  Heaven. While living on the island I visited this spot often; when a friend came to visit, when I wanted a quick hike, when I missed home.  If you have ever been somewhere that you felt as though it wrapped you up, reminded you how very blessed you are and gave you a sense of calm- you understand.  This is my spot.  

Tuesday we arrived home from our eleven day stay on the island.   Before our trip began I made a “bucket list” of things to do, places I was anxious to take Adelynn and Josh.  The list grew longer and longer, but this hike was always at the top of my list.  In our three and a half years together I have probably told Josh about it a dozen times, and he sweetly pretends to be just as entranced every time.  When we arrived at the bottom of the hike I was overwhelmed with memories. The last time I had been here was my last night in Hawaii.. right before I moved.  Josh and I had just met, and during that sunset hike the clouds in the sky perfectly resembled a heart.  All at once I felt like it was paradise telling me that even though this adventure was ending, something greater was about to begin.

When we got to the top of the mountain everything was just as I remembered it.  Heaven.  The only difference was that this time, the man that I love was on one knee beside me, ring in hand, asking me to spend forever with him.

We are so excited to be engaged!engaged

bake it better

Whether baking is a second nature to you or not- it’s always great to stumble upon a new tip that makes your effort more worthwhile. Here are a few tidbits I have picked up along the way that have helped turn ordinary baking into something better!

1. Your recipe is your base.  Choose a recipe that you feel confident and comfortable with!  It’s easy to search through your favorite blogs and find fun recipes- but don’t forget about the treasures that may be right under your nose.  Some of my very favorites are the ones jotted down on recipe cards that have been passed down for generations.  Where ever your recipe comes from- always read every step of the instructions and ingredients to be sure you have everything you need before you begin.  There is nothing worse than finding out you are missing a vital ingredient halfway through mixing!

2. The best of the best.  When it comes to ingredients quality truly does matter.  The image above demonstrates the difference between low quality and high quality vanilla extract.  These bottles both boast that they are “Pure Vanilla Extract” (no imitation here!)- but the color speaks volumes.  For a rich balance in your baked goods- splurge for the good stuff! A few favorite ingredients of mine are Nielsen Massey vanillas, Williams Sonoma Espresso Powder, Frontier Cocoa Powder, and Ghirardelli Baking Chips.

3. Parchment Paper is magic.    Most older recipes call for greasing the pan before you begin baking.  With Parchment Paper, you simply cut a sheet to fit the pan, drop cookies, bake, and then watch as they can be lifted right off the sheet- no spatula required.  Parchment paper also helps cookies maintain their thick chewiness by not adding excess oil to the base of the cookie.  Awesome.

4. Room Temperature Ingredients.  Any butter, eggs or milk that go into a baked recipe need to be room temperature to incorporate most evenly.  At room temperature, they bond and form an emulsion that traps air. During baking the air expands and produces the light, even texture that we strive for in cookies, cakes and breads.  No time to wait?  Place eggs in a bowl of fairly warm water while you mix the other ingredients and microwave butter in 5 second intervals until temperature is achieved.

I love finding simple ways to ensure consistent results.  A few changes in the way something is prepared can take the taste and texture to new levels!  Please share your tips and questions!
