pumpkin_donuts_1With Fall right around the corner and cooler temps in the air, pumpkin recipes are all the rage.  This is a recipe we tried at home last Fall after I had received my latest edition of Real Simple magazine and it did not disappoint!

I was gifted a donut pan a few years ago from my friend Jacki.  You see, she and I are both obsessed with the kitchen, our KitchenAid mixers, and all things baking!  Therefore this pan was the perfect gift, but there was one problem: every single donut recipe I had tried to bake never tasted spot on.  The textures were off, flavor was never great, and they never felt like real donuts.  But then I found this recipe while flipping through the pages of Real Simple and that all changed!  We love pumpkin rolls, pumpkin bread, and even pasta with savory pumpkin sauce, so I knew these donuts might just be a hit, and they were!  They are similar in texture to pumpkin bread and aren’t overly sweet which is great because most donuts are cloyingly so.  And the sour cream glaze is perfect atop these and adds a sweetness with just a touch of tang from the sour cream.

pumpkin_donuts_4Another reason we love this recipe is because we have a son with a severe peanut allergy and buying donuts from a local bakery or grocery store will never be an option.  And it just didn’t seem fair for him to miss out on all of the good things in life, so we learned how to make donuts.  We hope you will love this recipe as much our family does!

pumpkin donuts with sour cream glaze
 
Ingredients
  • Donuts:
  • ½ cup canola oil, plus more for greasing the pans
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1½ to 1¾ teaspoons pumpkin pie spice
  • ½ teaspoon fine salt
  • ¼ teaspoon baking soda
  • 1 cup pure pumpkin puree
  • ¾ cups granulated sugar
  • ¼ cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • sour cream glaze:
  • ¾ cups confectioners' sugar
  • 2 tablespoons sour cream
  • ¼ teaspoon lemon juice
  • Sprinkles optional.
Instructions
  1. Heat oven to 350* F. Lightly oil two 6 compartment donut pans. Whisk together the flour, baking powder, pumpkin pie spice, salt, and baking soda in a medium bowl. Set aside.
  2. In a separate bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, oil, egg, and vanilla. Add the dry ingredients and mix just until combined. Do not over mix.
  3. Spoon ¼ cup batter into each compartment of the prepared pans. Bake until the donuts are golden brown and spring back lightly when touched, 12-14 minutes, cool in pan 15 minutes. Then transfer to metal rack to cool completely.
  4. Whisk together the confectioners' sugar, sour cream, and lemon juice in small bowl. Drizzle over the donuts. Scatter on the sprinkles, and then add sprinkles if desired. Let glaze completely set before serving.

inexpensive drugstore beauty

drugstore_finds_2014_fall1Revlon ColoStay Eyeliner with SoftFlex glides on smooth and stays put all day.  Another bonus – no sharpener needed. 2Milani Baked Blush one of my favorite blushes.  Luminoso is subtle yet flattering enough for everyday use.  3L’Oreal Paris Studio Secrets Professional Color Correcting the green formula hides redness and acts as a primer for foundation. 4Rimmel London Match Perfection Skin Tone Adapting Concealer great for under eye coverage and brightening. 5Tweezerman Mini Slant Twizzer love love love these tweezers.  Pretty colors to boot. 6Revlon Just Bitten Kissable Balm Stain apply a little for some color, a lot for a bolder lip.  This balm stays on all day. 7e.l.f. High Definition Powder I have yet to try this yet have heard it’s very comparable to Makeup Forever’s powder which makes it an immediate must have!

jean jackets on

Wow.  It has been an amazing series of days in our land.  We were embraced by a miracle last Thursday.  Witnessing Locke’s birth was an experience like no other.  My mind is constantly going back to the scene, and my heart explodes every time I think about his debut.  I will leave all the details to Shan and her beautiful words (it will be a post like no other, that’s for sure).

One thing Shan may leave out is how her friend and photographer thought “the call” was a false alarm therefor looking like a complete hot mess was fine.  I have never been more wrong in my life.  Not in a million years did I think I would look better during my own labor than I would shooting someone else’s.  The good news is I should not be in too many pictures, the bad news is I know I am in a few.

With that being said my version of looking a hot mess has certainly broadened over the years. A bun for instance was never acceptable. It’s now a staple for that 3rd day of unwashed hair (okay, 4th). What has and will always be acceptable in my world is a good jean jacket. And this one is like a best friend. Comfortable, a little worn around the edges and always fits just right. We’ve have been together for 15+ years. (It gave into my razor sharp elbows about 3 years ago.) What some find in their favorite pair of jeans I’ve found in this jacket. And clearly the apple does not fall far from the tree.
