Eggplant Roll-upsDoes the repetitiveness of life ever get the better of you?  Where out of nowhere something as simple as “what’s for dinner” makes your brain spin and your eyeballs go crazy.  That has been me lately.  Most days I will happily prepare a meal, but when it’s cold as balls outside my motivation falls flat.  (Yes, I said balls, you’re welcome Sticky.)

Of course I want warm food just as much as the rest of the household.  The problem is that I do not want to leave my cozy blanket cave in order to make it.  Not only does Sticky do all the grocery shopping but lately he has had to make his famous grilled cheese nightly.  Yes, he is a good man.  I definitely owe him some delicious home cooking – hopefully this is a good start.

Eggplant Roll-ups Eggplant Roll-upsBasil, mozzerella and marinara – I’m sold every time those 3 get together.  Put them on crostina, pizza dough, pasta…it’s all food heaven to me.  This particular way of serving them gets extra bonus points because a. it’s filling and b. is not a carb overload.  Of course it is even more amazing with some crusty bread, but we don’t have to talk about that if we don’t want to.

Eggplant Roll-ups Eggplant Roll-ups Eggplant Roll-upsI am looking at these images kicking myself for not doubling the recipe.  Fabulous eggplant roll-up leftovers sound divine compared to the dry wheat pita I shoved peanut butter in and called dinner (we didn’t have the cheddar for grilled cheese).  At least there was wine to wash it all down.

Recipe type: Vegetarian
Serves: 4 side dish
Ingredients
  • 1 large eggplant sliced into 8 to 9¼" lengthwise slices (or 2 small)
  • 1 bulb fresh mozzarella (sliced the amount of times as eggplant)
  • Fresh basil leaves
  • 2 cups marinara
  • ¼ breadcrumbs
  • olive oil
  • salt & pepper
Instructions
  1. Preheat oven 350 degress and place a little marinara in the bottom of a 8X8 baking dish.
  2. Brush eggplant slices with olive oil and season with salt & pepper.
  3. Place eggpant on a preheated grill pan and grill both side (slices should be soft and pliable).
  4. Remove eggplant from grill and let cool. When ready to handle place one mozzarella slice and one basil leave on either end of eggplant slice and roll. Place in baking dish. Repeat with all slices.
  5. Once all rolled pour remaining marinara on top of rolls and top with breadcrumbs. Drizzle a little olive oil over dish.
  6. Bake in oven for 20 minutes or until bubbly and a little golden on top.

catching up

If you landed here with high hopes for a yummy recipe you’re about to find yourself disappointed.  I’m breaking the mold a bit today and not sharing a recipe, because, well, to be honest these salted caramel cookie bars didn’t exactly come out as I had hoped.  My first mistake was that I used too small of a pan, so they were a bit thick.  Honestly, they taste pretty good- they just aren’t something you can’t live without, which isn’t really good enough if you ask me.  (Personally, if I am about to shove my face with caramel and chocolate it better be well worth the calories!) So, these need a bit of work.

Honestly, I could have quickly whipped something else up to share today, but after a crazy busy week of cookies- I decided me and my oven are just due for a little space from each other.  (Don’t worry- we will surely reconcile tomorrow.)  I just need a little break.

After a few weeks of go, go, go I find myself in that lull of exhaustion, where suddenly, you realize you aren’t really doing anything well.  I’m flopping things I put in the oven, yelling at my husband over bottled water (yes, bottled water), not making time to sit on the floor and play, not giving anything my undivided attention and forgetting the importance of being intentional with the moments of my day.  We’ve all been there.  It’s an ugly place.

Today I am staring at the words above and remembering how important they are to my heart.  Be fully there.  Sip some tea, get lost in a book, get lost in laughter.

(A few things I am getting lost in: The beginning of Parenthood, since I aparently was missing out on the best show ever.  Thank you, Netflix.  This beautiful, yummy tea.  These grace-filled words on parenting well.)

fresh cuts for spring

Spring?  Yeah, yeah, I know.. it’s totally a blizzard outside.  In my world hair follows the trends of the retail world- February rolls in and so do the bright colors anticipating spring.  You know, so that by the time it gets here we are good and ready!

Last week Brandy surprised me with a trip to the salon.  My heart and hair were both screaming for some TLC, and like any good friend she could hear their cries.  (My roots were seriously screaming in desperation.)  I will not conceal here how long it had been since my last trip to the chair.  I didn’t get much cut off, but I think that my next trip will be to return to the long bob (“lob”) I had after Adelynn was born.  This spring is all about the messy, curly lob- go get yourself one!

Free spirit, festival going, hair swinging girl I am most certainly not.  Not even a little bit.  With that being said there is no denying that the 70s have taken over Spring 2015.  From suede to fringe, wide legs and flowy florals this season is all about the decade that took the rules out of fashion.  Here are a few of my picks that even the least eclectic minded, like myself, could pull off in 2015:

good morning valentine

We promise this will be the last post in which we gush over Valentine’s Day…until next year of course.

But seriously guys, how rad is it that V-day is on a SATURDAY?!  This calls for an all day celebration of love, starting with breakfast.  Who wouldn’t love waking up to those heart shaped pancakes or donut hole arrows…and what about that bacon?  (We are not sure if heart shaped bacon is so right or so wrong.  Let’s go with so right for February 14th.)  Any of these treats would make your Valentine feel extra special from the minute they wake up tomorrow:
