seventeen weeks

When making my wishlist for Sticky I try my best to put options on there that I would never purchase for myself.  These boots would be one of them.  I knew I loved them but not enough to chose them over something more practical and classic – like riding boots.  They are just different enough that talking myself out of them would have been inevitable.  Of all the boots I claimed I wanted these were the wild card, the “hmmm, I just don’t know”.  You did good Sticky, really good.  Thanks babe!

17 weeks, gosh how can we be at 17 weeks already?  In so many ways this pregnancy mirrors Jettie’s and in other ways it could not be more different.  Unfortunately I have struggled the last few weeks, which may be a story for another time, but just seeing this bump makes me happy.

easy “lite” skillet cauliflower gratin

cauliflower_gratin_65 weeks ago I was told no more exercise. My response was “ok, I’ll just run on the treadmill.” This was greeted with an in sync “no” from OBGYN and husband. “Can I walk?” (Doctor squishes eyebrows and forehead in a way that says my version of walking is probably not normal or safe.) “Just please take it easy. Relax.” And I thought she knew me.

Let’s get this out of the way first. Absolutely without a doubt I would do anything for this unborn nugget (or avocado according to my pregnancy app). I still have to pinch myself just thinking that there is a little miracle he or she growing in there. Not being able to exercise is absolutely nothing I hold against baby or this pregnancy. This doesn’t mean I don’t miss it. And miss it I so terribly do. It was my release, scream in the pillow place. I looked forward to losing myself in the Pandora running station. Pushing myself to go faster and further than the last time. Sweating profusely while secretly loving and hating Jillian. It was all a rush and it all made me feel good. I didn’t exercise while pregnant with Jettie and I swore this time around I would in hopes that post baby body would be so much easier to accept and recover from. Sitting here now I feel like a slug, way more than I ever did with the first pregnancy. It would be a lie if I said I wasn’t terrified of falling in the deep hole of self disgust again come end of June. Possibly even worse this time around.

You would think enjoying being a fit person would have me at least eating fabulously despite the fact I can’t exercise. Yeah, you would think that. An embarrassing amount of Starburst and dark chocolate have been my go to of late. Fruit cravings are in abundance much like the first time pregnancy. Unfortunately devouring 7 clementines in the blink of an eye probably isn’t all that healthy (fairly certain I can feel my dentist cringing right now). I have to choke down a spinach smoothie, something I normally love, because it tastes different (and not like a cherry Starburst). I swear I have been consuming holiday calories since mid December. Something needs to be done. If not the 30lbs I gained my entire pregnancy with Jettie will greet me by week 20 with this one.

Several years ago my mom threw a spiral bound calendar recipe book in one of my Christmas presents. At the time I didn’t think much of it, thought I would throw it in the cupboard of lost cookbooks. But as soon as the calendar turned January Sticky and I became interested in trying the Eating Well dishes. We tried a spinach potato soup and were pleasantly surprised. Next up a shrimp po’ boy with cabbage – yum. Recipe after recipe was fantastic. Satisfying enough for the winter months yet light and dare I say healthy. This cauliflower gratin was another favorite. A way to eat a vegetable that leaves you feeling full and cozy. I don’t feel bad about myself after eating this and everyone in the house loves it as well. The only person that has control over the way I feel is myself. This is my first step in a mission to feel better and simply enjoy being pregnant.

easy “lite” skillet cauliflower gratin
 
Ingredients
  • 1 medium head cauliflower cut into 1-inch florets
  • 2½ cups unsweetened almond milk or nonfat milk, (1/2 cup divided out)
  • ½ teaspoon salt
  • 1 cup dry breadcrumbs, preferably whole-wheat
  • 1¼ cup shredded sharp Cheddar cheese, divided
  • 1 teaspoon extra-virgin olive oil
  • 3 tablespoons all-purpose flour
  • 2 tablespoon chopped scallions
  • 1½ teaspoon Dijon mustard
  • ½ teaspoon pepper
Instructions
  1. Position rack in upper third of oven; preheat broiler.
  2. Bring cauliflower, 2 cups milk and salt to a boil in a large ovenproof skillet over medium-high heat. Reduce heat, cover and simmer until the cauliflower is tender, about 5 minutes.
  3. Meanwhile, combine breadcrumbs, ½ cup cheese and oil in a small bowl. Whisk flour and the remaining ½ cup milk in another small bowl until smooth; stir the mixture into the pan and cook, stirring, until thickened, about 1 minute. Stir in the remaining ¾ cup cheese, chives, mustard and pepper. Sprinkle with the breadcrumb mixture. Broil until the top is crispy and beginning to brown, 1 to 2 minutes.
Notes
Also works well with sliced potatoes.

favorite baking tools

I’ve never been much of a “gadget girl”, but I’ll admit I own (and love) a Keurig, respect  fancy can openers and have occasionally insisted on needing things like an emulsion blender that I have now had for three years and used a total of three times.  Really though, it is important to have a few things in your kitchen that prove to be timeless and get the job done effortlessly, everytime.  In search of “the best” I have tried just about every cookie sheet on the market, own about 20 spatulas and use the same one every time, and legitamately shed tears over my lost measuring spoon from my beloved William Sonoma set.  Looking for guidance for baking essentials, I’m your girl.

Here are my can’t-live-withouts, and where you can find your very own:

1. Oxo Cookie Scoops– The best quality I have found- and believe me they have been put to the test.  Millions of scoops later, I’m still in love with these.

2. Microplane Zester– Essential for zesting lemon, oranges & limes, this is the perfect tool for the job.  Easy clean up gives it five stars in my book!

3. NordicWare Cookie Sheets– 5 million cookie sheets later, I have found the one.  An even bake, easy cleanup, and best of all- they are made right here in the USA.

4. Oneida Spatula– Josh randomly gifted me this spatula one Christmas, and it has truly stood the test of time (and hard labor. Like seriously.) I have paired this guy with amounts of dough no spatula should be able to handle, and it has never let me down.  The day I finally snap it in half will be a sad, sad day.

5. Williams Sonoma Measuring Cups & Spoons– Oh, these measuring cups.  If I told you I love them, it would be an understatement.  Get a set for yourself- but they also would make a really great gift!

6. Kitchenaid 6 Quart Pro Series Mixer–  Before buying a mixer there are so many things to think about.  First of all, they are an investment, so be sure to get the model that best fits your needs.  Be sure to explore your options!  The Artisan series is great if you just need it for light use, but if you are an avid baker, I would strongly recommend looking at a “Pro-Series” bowl that features a bowl lift instead of a tilt head.  They also come in different quart capacities- so again, think about what you will be using your bowl for.  Also look around for good deals! Brad’s Deals features sales frequently, and low prices can also be found on Amazon.

7. Cuisinart Stainless Bowl Set with Lids– The lids of these bowls make them super convenient for throwing things in the refridgerator- and the sizes of them are perfect.  They get a ton of use in my kitchen!

homemade cold remedies

Like many other parts of the midwest, here in Ohio we are completely snowed in. This crazy weather has locked us in our house for two days now, and I would be lying if I said that we weren’t enjoying it. Yesterday our day was filled with Monopoly, movies, soup, and I even took a few hours to really get lost in a good book (more on that later- you must, must, must read this book!). The only scary part of all this is that you really, literally, can not get out of your house, let alone your driveway if you need to get somewhere. I’ve been wanting to make and feature a few of these DIY’s, but the timing seemed perfect to share them now.

It’s always smart to have a few homemade remedies up your sleeve, for those times that you need something and can not get to the store- not to mention the peace of mind you get knowing that there are no dangerous additives involved.

Here are a few things to have on hand to create multiple remedies, straight from your kitchen:

DIY Vicks Vapor Rub by Wellness Mama:

  • 1/2 cup coconut oil, almond oil or olive oil
  • 2 level tbsp of beeswax pastilles
  • 20 drops of Eucalyptus oil
  • 20 drops of Peppermint oil
  • 10 drops of Rosemary oil
  • 10 drops of Cinnamon or Clove oil (optional)

Directions:

  1. Melt the beeswax with oil of choice in a double boiler until just melted.
  2. Add the essential oils, using only half of the amount if making baby rub. (You can also just dilute with more coconut oil before using if intended for baby!)
  3. Stir until well mixed, and the pour into container with lid for storage.
  4. Use as needed for cough and congestion.

Ginger Honey Lemon Tonic by The Kitchn:

  • 1 cup hot water
  • 1″ or so, roughly chopped ginger root
  • 1 organic lemon wedge
  • 1 tsp honey, or to taste

Directions:

  1. Bring the water and ginger to a boil, then lower the flame.
  2. Add the lemon (squeeze it into the water then drop the whole thing in) and keep at a low simmer for a few minutes.
  3. Pour into your favorite mug, and stir in honey to taste.

Thyme and Honey Tea by Whole Green Love:

  • 2 tbsp of fresh thyme
  • 8 oz. boiling water
  • 1 tablespoon raw honey

Directions:

  1. Pour the boiling water over the thyme, and let steep for about 5 minutes.
  2. Pour through a strainer into your mug, and stir in honey.

These remedies are all awesome for the common cold, but don’t forget about simple remedies, like sleep, dark chocolate, peppermint & green teas, power foods (like oranges, garlic, blueberries, walnuts, spinach & salmon), and lots and lots and lots of water.
