lentil sloppy joes

lentil_sloppy_joes_1It’s hard imaging a childhood that does not include sloppy joes.  Never being a big fan of meat this classic sandwich was one thing I gladly devoured in my younger years.  Probably had something to do with the fact that the ground beef was hidden in a barbeque-y ketchup-y yum, yum, YUM sauce.  Since giving up all land loving meats I have missed very few things if any.  Yet something about that tangy sauce makes my mouth water every single time.  Since using “fake meat” is completely out of the question in my book, I jumped for joy over the thought of using lentils.  Why I have not been doing this for a decade, I don’t know.  I will be now though.

lentil_sloppy_joes_2When chopping your onion, pepper and carrot keep in mind the size.  A large dice will create a rather messy joe, while a smaller chop (similar to the size of a cooked lentil bean) will aid in keeping the sandwich together.  Of course some will still spill out of the bun – but that’s half the fun isn’t it?

lentil_sloppy_joes_3For me the combination of sweet, spice and tang is pure sloppy joe perfection.  It is a sauce that can easily be adjusted though.  Hot pepper flakes, jalapeno, soy sauce or even honey would all be fine additions.  It is completely up to you and your family’s tastebuds on how wild or not so wild you want to get.

lentil_sloppy_joes_4Grab a fork and feel free to dine on this amazingly delicious bean dish a la carte.  Throw it in a toasted bakery bun and well, that’s vegetarian sloppy joe heaven.  If you really want to show off (and be uber super healthy) place your joe in a lettuce wrap.  The beans are filling making this option ideal for a light lunch.

lentil_sloppy_joes_5The smell, the texture, the sweet, sour tang – it’s all just so good!  My meat loving man even loves these things.  So much in fact I hide the leftovers in the fridge.  They are even better the next day which completely takes sharing off the table.

lentil sloppy joes
 
Prep time
 
Ingredients
  • 2 cups Water
  • 1 cup Lentils
  • 1 small Onion, diced
  • 1 Red Bell Pepper, diced
  • 1 Carrot, diced
  • 1 Clove Garlic, minced
  • 1 Tbsp Chili Powder
  • 1 tsp Paprika
  • 2 Tbsp Brown Sugar
  • 28 oz can Diced Tomatoes (look for BPA free or use 3 fresh tomatoes chopped)
  • 3 Tbsp Tomato Paste
  • 1 cup Water
  • 1-2 Tbsp Worcestershire Sauce
  • 1-2 tsp Mustard
Instructions
  1. Rinse the lentils thoroughly and place in a pot with the 2 cups of water. Bring to a boil, then lower to a simmer for approximately 20 minutes. Do not overcook. You want the lentils soft they will continue cooking with the other ingredients.
  2. In a separate large pan, saute the onion, pepper and carrot in olive oil or water for 5-10 minutes. Add the garlic, chili powder, paprika and brown sugar. Cook stirring constantly for 2 minutes.
  3. Drain the lentils and add to the onion veggie mixture. Stir in diced tomatoes, tomato paste, water, Worcestershire sauce and mustard. Simmer over medium heat for about 20- 30 minutes.
  4. Serve on toasted buns or in lettuce wraps.

pistachio dark chocolate cookies with sea salt

Oh, for the love of pistachios!  These are yummy beyond belief.  Pistachios never last long in our house, but I managed to hide a little bag in my baking cupboards, and quite honestly forgot they were there for a few months. (Don’t worry, they weren’t expired!)  I couldn’t have found them at a better time- these cookies are just what we needed this week.

Adelynn’s cousins and Auntie Hannah have been staying with us for a few months before moving home to South Carolina. Previous to them arriving, the girls had hardly spent any time together, besides our trip to Hawaii to visit them last year. We knew that in their time here the girls would have the opportunity to bond and make those cousin-memories that we all have from childhood- but we never really thought about how hard it would be to wave them goodbye when their stay with us was over. Adelynn learned what it felt like to have “sisters”, to share even her most prized possessions, to split the last cookie.
Leading up to their leaving today we have tried to explain to her that they are moving, and won’t be here when she wakes up every morning anymore- but to an almost three year old those are just words. Words that don’t resonate because the emotion of telling someone goodbye- change of that magnitude- is not something she has yet felt or dealt with in her life.
Walking your child through new emotions is so, so hard.  Last night when we told her she needed to say goodbye before going to bed the “okay” that followed dripped in a sadness that I had never heard in her voice.  My heart shattered on the spot.  Why can’t we take these painful emotions for them?  It certainly would be easier sometimes.
This morning has gone far better than we expected.  We are trying to distract her with little things that we know make her smile, and it seems to be working.  A small milestone, but it truly feels like a mountain, which I know sounds ridiculous unless you know that love.

pistachio dark chocolate cookies with sea salt
 
Ingredients
  • 1 cup (two sticks) unsalted butter, at room temp
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs, at room temp
  • 1 tsp vanilla
  • 1 3.4 oz package pistachio instant pudding mix
  • 2½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups semi sweet or dark chocolate chips
  • ½ to ¾ cups pistachios, toasted and chopped
Instructions
  1. Preheat your oven to 325F and evenly spread pistachios on a baking sheet.
  2. Toast for about 10 minutes, stirring about every ¾ minutes.
  3. Once toasted up the oven temperature to 375F, and line two baking sheets with parchment paper.
  4. In a mixing bowl, cream butter and sugars together until light and fluffy. Add eggs, seperately, being sure to scrape down the sides between each addition. Add vanilla, and finally pistachio pudding mix.
  5. In a seperate bowl, whisk together flour, baking soda and salt.
  6. Using a wooden spoon, mix by hand the wet ingredients into the dry. Stir in the toasted pistachios and chocolate chips, being careful to not overmix.
  7. Scoop cookies onto prepared baking sheets, and bake for 12 minutes, until tops are just barely golden.
  8. Let cool on baking sheets for about 10 minutes before moving to cooling racks. (They are so yummy warm- so feel free to gobble them up at this point!)

I added sea salt just before throwing these in the oven, because when my heart is in turmoil sea salt and dark chocolate seem to be the cure. I loved this combo here, but they would be incredible without the salt as well. The crunch of the pistachios gives these cookies the perfect texture, and you could add less or more, depending on your personal love affair with pistachios. (No one is judging you here!) For now these cookies are filling the lonely gaps those three sweet souls have left in our home.  We certainly will miss you, girls.

all natural disinfecting wipes

Every four weeks for the last few months now Brandy and I have been venturing to Fort Wayne together, for a checkup with our OB doctor and an extra long mosey around Target.  The girls had been with us previously, but last week it was just the two of us.  It was one of those days where you’re in Target and the world is on pause around you, you’ve got all the time in the world to explore every endcap and try on sale shoes that you don’t really need.  (Wait, doesn’t this happen every time I’m there?)  Two hours in, we had made it to the cleaning isle and I grabbed for Clorox wipes, which have been my go-to lately for cleaning up little toddler messes, toothpaste in the sink, vanilla stains on the counter, mac and cheese glued to the chair, you name it.  Brandy commented about how she’s been reading so much about how these products are doing more damage than good, and my hand shied away from the shelf.  How did these wipes sneak into my daily routine around the house?

Disinfecting wipes are certainly convenient- but sometimes the cost of convenience isn’t worth the harmful chemicals and artificial fragrances we are subjecting our families to.  Our family has been actively switching away from as many artificial/plastic/chemical exposures as possible this year.  We are loving our DoTerra family physician kit and finding ways to use it to replace things that we fill our shopping cart with.  These wipes are beyond simple to make, and so safe that your toddler can use them to help you clean without worrying about their sensitive skin.  (Double score!)

Here’s what you need to make your own:

  • Old fabric, such as t-shirts, flannel, rags, that you can cut into small squares.
  • 1/2 cup purified water
  • 1/2 cup white vinegar
  • 15 drops lemon essential oil
  • 8 drops lavendar oil

Combine all ingredients into a glass jar or container with a lid, and add your fabric scraps. (Be sure to use glass, essential oils can react to plastic!) Place lid on container and shake to coat rags. Ring them out and use as needed! (And feel free to throw them in with your laundry and re-use your fabric- they will not harm the other clothes!)

Clorox wipes have no place in my shopping cart anymore! (I can’t say the same about the other things that somehow sneak into your cart at Target….)

maxi dress forever (28 weeks)

This may be the only look you see for the rest of this pregnancy.  It is just too easy and too comfortable.  Throw in the “I don’t care hairstyle” and you’ve got yourself an effortless look.  I’m fairly certain this hair has not been french braided since the last juinor high track meet I participated in (let’s just say that was a long, long, loong time ago).  Unlike those days this braid is haphazardly put together with teased unwashed hair.  In other words it can be done in less than 2 minutes.  Whether it is me or not the verdict is still out.  Jettie loves it though, says it’s mommy’s Elsa hair.  Being an ice queen for the day sounds fabulous to me.

maxi_dress_maternity_jean_jacket_1 maxi_dress_maternity_jean_jacket_2One thing that I can’t seem to shake during this pregnancy is sneezing.  Yes, sneezing.  I know this may make me sound nuts but I sneeze at least 10 times a day (not something I am accustom to).  There is also a large baby boy sitting on my bladder.  You can equate on your own why these two things do not mix well.

I am also trying to shake a stomach bug that is apparently attacking pregnant women.  Not a terrible one but being 3rd trimester and early labor worries we have been on high alert for dehydration.  With my lack of appetite I was hoping to at least feel a little less large this week.  Didn’t happen.  In fact I felt like a turtle flipped on it’s shell yesterday trying to stand up from a low chair.  I can only imagine what 40 weeks will look like, hoping we make it to that point of course.
