Happy Valentine’s Day Eve!!
Last Valentines Day Josh and I decided on a quiet date night at home. I locked myself in the bathroom for a few hours and got ready like we were going out, while he was busy in the kitchen making dinner and transforming our quaint kitchen into something a bit more romantic. To me, sometimes these are the very best date nights. No waiter rushing you out of your table when you’re done eating, no loud distracting table nearby, and you don’t have to pay $9 each time you want to refill your wine glass. We sat in our little kitchen, talking about anything and everything. So simple, but so perfect. After dinner, true to form- I wanted something sweet. What better way to end a night than with two pretty little cupcakes?
Chocolate Cupcakes For Two: (Recipe adapted from An Edible Mosaic)
- 3 tablespoons all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon natural unsweetened cocoa powder
- 1/8 heaping teaspoon baking soda
- 1/16 teaspoon salt
- a pinch of espresso powder (can be omitted, but not recommended)
- 3 tablespoons buttermilk
- 1 tablespoon canola oil, or other neutral-flavored oil
- 3/4 teaspoon pure vanilla extract
Directions:
Preheat your oven to 350F, and put two pretty liners in a muffin tray. Whisk together dry ingredients, then add wet ingredients being extremely careful not to over-mix! (When baked goods are over-mixed they become more dense and lose that awesome, light, fluffy, heavenliness- so don’t do it!!!) Divide the batter between the two liners and pop them in your oven for 18-22 minutes. Always test by inserting a toothpick before removing them from the oven. A clean toothpick means they are good to go!
Once your cupcakes are cooled you can top them with frosting- or if you dont have any on hand and don’t feel like whipping some up simply sprinkle them with powdered sugar and enjoy!
