guinness chocolate cake with irish cream frostingIrish as can be, and rich with chocolate and boozy frosting. If you’re looking for a fabulous dessert to serve on St. Patricks Day, your search is over! Yes, cakes are a bit tedious but lets be honest- your work is going to pay off.  And we really can’t think of a better way to use up some of that homemade Irish Cream!  Frosting?  Yes please.
guinness chocolate cake with irish cream frostingUsing your mixer, fitted with the paddle attachment, combine the vegetable oil and sugar until just combined. Add the eggs, yougurt, and vanilla, mixing until again- just combined.
In a seperate bowl, add your dry ingredients and whisk to combine.
guinness chocolate cake with irish cream frostingSlowly add the dry ingredients to the mixer bowl, and finally pour in the Guinness. Mix on medium/high for 3 minutes.
guinness chocolate cake with irish cream frostingEvenly divide the batter between three 8″ cake pans (that have been greased and lined with parchment paper), and bake for about 40 minutes at 350F.
Prepare the frosting by beating the butter and confectioners sugar in your mixing bowl, until light and fluffy. Slowly add the Irish cream.
guinness chocolate cake with irish cream frostingOnce your layers are all completely cooled, frost your cake between the layers, and top with chocolate shavings if desired.

Ingredients
  • Cake:
  • 3 cups flour
  • 1½ cups cocoa powder (I used Hersheys Special Dark)
  • 2 tbsp espresso powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup vegetable oil
  • 4 cups of sugar
  • 4 large eggs
  • 1 cup greek yogurt (Chobani plain non-fat yogurt)
  • 3 tsp vanilla
  • 9 oz Guinness beer
  • Buttercream:
  • 4 sticks of butter, at room temp
  • 8 cups powdered sugar
  • ¼ cup plus 2 tbsp Irish Cream (our homemade version, or Bailey's)
Instructions
  1. Preheat oven to 350F, and grease three 8" cake pans and line them with parchment paper.
  2. In your mixing bowl, cream together vegetable oil and sugar until just combined. Add the eggs, vanilla and yogurt, mixing unti just combined.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, espresso powder, and salt.
  4. Slowly add the dry ingredients to the wet, and then add in the beer. Mix on medium-high for 3 minutes.
  5. Divide batter evenly between three cake pans, and bake for about 40 minutes, unil a toothpick can be inserted and comes out clean.
  6. Make the frosting by combining the butter and powdered sugar in your mixing bowl. Beat on medium-high until light and fluffy, and then add in the Irish Cream.
  7. Once cake layers have completely cooled, add frosting between each and top with chocolate shavings if desired. Enjoy!
